Fried Chicken Strips

I remember growing up there were special occasions where the dinner table would be set full of food and when I say full, I mean FULL, overflowing with an arrangement of savory and sweet goodies.  Usually around Christmas time and New Year's Even.

One thing I used to love were the fried chicken pieces, and it wasn't anything special, just a couple spices, garlic and salt and pepper etc and then fried on a skillet.

But it got me to thinking that maybe I could just add tweak it a tiny bit and soak them in some buttermilk first and then drop them in flour and yada yada yada, you know where this is going.....instead of wings and drumsticks, I went with Chicken Tenders and the result was really good, especially when you squeeze some fresh lemon juice over the chicken.

1lb chicken breasts or about 4 or 5
buttermilk
salt and pepper
parsley
garlic powder
paprika
flour

Cut the chicken breasts into 1 inch thick strips.  Season with salt and pepper, parsley, garlic powder, paprika.

Pour buttermilk over just enough to cover the chicken and pop in the fridge until dinner time.  (if you forget to do this in the morning, it's fine, trust me, just put it all together but let it sit for a few minutes at least).

Put some flour into a ziploc bag and toss in the chicken strips one at a time, shake bag to coat well.

Fry the chicken strips in a deep fryer for about 5 or 6 minutes or until golden brown.  Remove, keep warm while you cook the others.  When they're all done, slice a lemon in half and squeeze some of the juice onto the chicken, you don't want too much but just enough to give it taste.  Alternatively, you can just serve with lemon slices and let your family or friends do it themselves.

Quick, simple and so good.
